Breakfast Muffins Ingredients 6 eggs 1 cup bacon bits, fried 1 cup grated cheese 1-2 cups other mix-ins, e.g.: 1 cup chopped hard-boiled egg 1/2 cup chopped fresh tomato 1/2 cup chopped fresh herbs 1/2 cup kalamata olives 1/2 cup chopped capsicum 1/2 cup self-raising flour 1/2 cup milk salt, pepper, and dried herbs to taste Method Preheat oven to 200C / 400F. Mix flour and milk. Add eggs and whisk well. Stir in bacon, cheese, and mix-ins. Fill muffin pan and sprinkle salt, pepper, and herbs on top. Bake 12 minutes.
