Banana Bread Ingredients 3/4 cup margarine 1 cup brown sugar 1/4 cup yoghourt (or 2 eggs) 3 cups self-rising flour 4 ripe bananas 1/2 cup walnut pieces (optional) 1/2 cup chocolate chips (optional) Method Preheat oven to 180C / 350F. Mix together butter and sugar. Add yoghourt (or egg). Add mashed bananas and any mix-ins (walnuts, chocolate chips, etc). Stir in the flour. Bake until a skewer comes out clean (45 minutes for a loaf). Notes Makes 1 bread tin loaf, OR 24 standard muffins, OR ~70 mini muffins.
