Spinach Slice (Σπανακόπιτα)

Ingredients
- 500g / 20oz spinach leaves (two bags)
- 2 bunches of green onions (10-15 bulbs)
- 1/4 cup fresh dill or 2 tsp dried
- 1/4 cup fresh parsley or 2 tsp dried
- 1/4 tsp salt
- 1/4 tsp pepper
- 2-3 baked potatoes
- 4-5oz/150g filo sheets
- olive oil
Method
- Preheat the oven to 180C / 350F.
- Finely chop the green onions and sauté in olive oil until soft.
- Add chopped spinach, salt, pepper, dill, and parsley, and sauté until wilted, and then remove from the heat.
- Peel and roughly mash the baked potato with a fork, and then add to the spinach mixture.
- Line one 9"x14" baking pan with paper, then place one or two filo sheets on the bottom. Brush with oil, and add another one or two; repeat the process 2-3 more times or until half the filo sheets are used.
- Spread the spinach mixture on top, then repeat the filo layering process with the remaining filo sheets.
- Cut into squares; this makes about 12 pieces.
- Bake 20-30 minutes until golden brown on top.
