Finely chop the green onions and sauté in olive oil until soft.
Add chopped spinach, salt, pepper, dill, and parsley, and sauté until wilted, and then remove from the heat.
Peel and roughly mash the baked potato with a fork, and then add to the spinach mixture.
Line one 9"x14" baking pan with paper, then place one or two filo sheets on the bottom. Brush with oil, and add another one or two; repeat the process 2-3 more times or until half the filo sheets are used.
Spread the spinach mixture on top, then repeat the filo layering process with the remaining filo sheets.
