Breakfast Muffins
Ingredients
- 6 eggs
- 1 cup bacon bits, fried
- 1 cup grated cheese
- 1-2 cups other mix-ins, e.g.:
- 1 cup chopped hard-boiled egg
- 1/2 cup chopped fresh tomato
- 1/2 cup chopped fresh herbs
- 1/2 cup kalamata olives
- 1/2 cup chopped capsicum
- 1/2 cup self-raising flour
- 1/2 cup milk
- salt, pepper, and dried herbs to taste
Method
- Preheat oven to 200C / 400F.
- Mix flour and milk.
- Add eggs and whisk well.
- Stir in bacon, cheese, and mix-ins.
- Fill muffin pan and sprinkle salt, pepper, and herbs on top.
- Bake 12 minutes.
