Thai Red Curry Porkballs

Ingredients

  • 500g / 1lb ground pork mince
  • 1 cup breadcrumbs
  • 1 tbsp Thai red curry paste
  • 1 cup mashed sweet potato (app. 1/2 potato)
  • 2 eggs
  • 2 tsp ground ginger
  • 1 tsp minced garlic
  • 1/2 tsp salt

Method 

  1. Mix all ingredients together.
  2. Form into balls and fry on low heat until cooked through, rotating as needed.
