Banana Bread

Ingredients

  • 3/4 cup margarine
  • 1 cup brown sugar
  • 1/4 cup yoghourt (or 2 eggs)
  • 3 cups self-rising flour
  • 4 ripe bananas
  • 1/2 cup walnut pieces (optional)
  • 1/2 cup chocolate chips (optional)

Method

  1. Preheat oven to 180C / 350F.
  2. Mix together butter and sugar.
  3. Add yoghourt (or egg).
  4. Add mashed bananas and any mix-ins (walnuts, chocolate chips, etc).
  5. Stir in the flour.
  6. Bake until a skewer comes out clean (45 minutes for a loaf).

Notes

Makes 1 bread tin loaf, OR 24 standard muffins, OR ~70 mini muffins.
