Banana Bread
Ingredients
- 3/4 cup margarine
- 1 cup brown sugar
- 1/4 cup yoghourt (or 2 eggs)
- 3 cups self-rising flour
- 4 ripe bananas
- 1/2 cup walnut pieces (optional)
- 1/2 cup chocolate chips (optional)
Method
- Preheat oven to 180C / 350F.
- Mix together butter and sugar.
- Add yoghourt (or egg).
- Add mashed bananas and any mix-ins (walnuts, chocolate chips, etc).
- Stir in the flour.
- Bake until a skewer comes out clean (45 minutes for a loaf).
Notes
Makes 1 bread tin loaf, OR 24 standard muffins, OR ~70 mini muffins.
