TVP Curry

Ingredients
- 1 cup TVP
- 1 cup vegetable stock
- 1 can mangoes (optional)
- 1 onion
- 1 cup blended tomatoes (or tomato passata)
- 1/2 cup unsweetened yoghourt (or coconut cream)
- 1 tbsp lemon juice
- 1 tbsp oil
- 1/2 tbsp ginger paste
- 1/2 tbsp garlic paste
- 1 tsp paprika
- 1 tsp garam masala
- 1 tsp mustard
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp salt
Method
- Rehydrate TVP in vegetable stock.
- Mix lemon juice, oil, ginger, garlic, and spices, then stir paste into the rehydrated TVP.
- Roughly chop and sauté the onion, then add marinaded TVP.
- Add tomatoes, yoghourt, and mangos, and then simmer. Thicken if needed.
- Serve over rice, with steamed greens.
