TVP Curry

Ingredients

 

  • 1 cup TVP
  • 1 cup vegetable stock
  • 1 can mangoes (optional)
  • 1 onion
  • 1 cup blended tomatoes (or tomato passata)
  • 1/2 cup unsweetened yoghourt (or coconut cream)
  • 1 tbsp lemon juice
  • 1 tbsp oil
  • 1/2 tbsp ginger paste
  • 1/2 tbsp garlic paste
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1 tsp mustard
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp salt

Method

  1. Rehydrate TVP in vegetable stock.
  2. Mix lemon juice, oil, ginger, garlic, and spices, then stir paste into the rehydrated TVP.
  3. Roughly chop and sauté the onion, then add marinaded TVP.
  4. Add tomatoes, yoghourt, and mangos, and then simmer. Thicken if needed.
  5. Serve over rice, with steamed greens.
